• 2 Cups soft white wheat flour (freshly milled)
  • 2/3 Cup Cocoa
  • 1 14\frac{1}{4} tsp. Baking soda
  • 14\frac{1}{4} tsp. Baking powder
  • 1 23\frac{2}{3} Honey Granules
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. chocolate extract
  • 1 Cup Mayonnaise (preferably homemade)
  • 1 13\frac{1}{3} Cups water
  1. Spray 2, 9 inch layer cake pans or a 13×9 pan and preheat oven to 350°.
  2. Mix first 4 ingredients and set aside.
  3. In a separate large bowl, with mixer at high speed, beat the next 4 ingredients for 3 minutes, or until light and fluffy. At low speed, add in the mayonnaise.
  4. Add half of the flour mixture and mix to combine.
  5. Add the water, mix to combine.
  6. Then add the remaining half of the flour mixture, mixing to combine.
  7. Pour evenly into the pans.
  8. Bake in 350° oven 25-30 minutes, or until a toothpick comes out clean.
  9. For layer cake, cool in the pans 10 minutes, and then remove layers to cool on racks.
  10. Frost the cake after it is completely cool. You may refridgerate or freeze the cake to cool it or stage it before frosting.
  11. For the 13 x 9 inch pan, you may choose to frost in the pan. Wait until it is completely cooled, or your frosting will melt.
